Ingredients: # Egg - 5 quantity # Onion paste - 1 cup # Vegetable oil -3/4 cup # Turmeric powder - 1 tsp # Red chili powder - 1 tsp # Salt - 1 tsp # Coconut milk - 300 ml # Fried onion - small quantity (for decoration) # Coriander leaves - small quantity (for decoration) # Green chili - 2/3 quantity Method: Heat up a curry pan and pour 3/4 cup of vegetable or olive oil. Add 1 cup of onion paste, stir and fry until light brown. Add 1 tsp of turmeric powder, 1 tsp of red chili powder, 1 tsp of salt and mix well. Cover with lid for 5 minutes. Add 300 ml of coconut milk in three steps (1 minute interval) and mix well. After second time, add 5 eggs into the gravy and allow to get fried/cooked. Ensure egg bottom is not burnt. Use medium low heat at this stage. Add last part of coconut milk and use the lid for one minute. You are almost at the end, decorate with fried onion and chopped coriander leaves. Add 2/3 green chili for flavor. Use the lid for a while and switch off the oven. Serve in the serving dish. Note: This dish is very easy to cook, takes very less time.
